Salting: The hams are buried in marine salt until they have absorbed a sufficient amount. The time this takes depends on the weight of each ham.

Maturing: The hams are hung in air-drying sheds in the Sierra de Jabugo Mountains until they are totally cured. This procedure gives the ham a dark, fatty colour, its characteristic smell and its unique flavour. The slowness with which a ham has matured is recognisable in the bacterial flora present on its skin.
