“Bellota Reserva” Iberian Ham is a traditionally elaborated product, the pig's hind leg being cut in the typical “serrano”, or mountain, fashion. Its exquisite taste is due to the pigs' diet based on grasses and acorns, in the fresh air of the Jabugo mountains.
This free range breeding process, known as the “ montanera ” system, makes this ham one of the most outstanding delicacies to be found anywhere in the world.
Typical features: - Black hooves - The “serrano”, or mountain, fashion of cutting the hind leg. - The date of slaughter is branded on the leg. - Unique, exquisite flavour. - Each leg weighs approximately 3,5 to 4 kgs. Production: 100% Jabugo Iberian pigs bred free range.
Salting: The hams are buried in marine salt until they have absorbed a sufficient amount. The time this takes depends on the weight of each ham.
Maturing: The hams are hung in air-drying sheds in the Sierra de Jabugo Mountains until they are totally cured. This procedure gives the ham its dark, fatty colour, its characteristic smell and its unique flavour. The slowness with which a ham has matured is recognisable in the bacterial flora present on its skin.
Nutritional data: Very beneficial for cardiovascular illnesses and for the circulatory system. Thanks to the oleic acid they contain, the ham's fatty acids reduce the amount of what is known as “bad” cholesterol. Pigs of purely Iberian stock fed on acorns have traditionally been referred to as “olives on legs”. Rich in proteins, calcium, phosphorus, iron and vitamins B1 and B2.
